Because the world doesn’t have enough blogs

Hi, kids. Just wanted to let you know that I’ve started my own blog, wherein I bloviate on writing and editing, and at some point in the near future, deep-fried vs. pan-fried chicken (spoiler alert: pan-fried). I may cross-post here occasionally, when the topic is not too deep in the weeds of editorial minutia. Come on over.

Yikes, who would actually deep-fry chicken? Of course, you have to have enough lard to get the skin really crispy…

Yikes, who would actually deep-fry chicken? Well, fast food restaurants come to mind, as well as members of my extended family, who actually owned a deep-fryer. (It took them awhile to make the connection between their love of deep-fried Twinkies and the diabetes and heart disease running rampant through our clan.)

Was that too subtly tongue-in-cheek? Sorry. I grew up in NC, and Sunday dinner was always chicken, floured and fried in lard in a huge cast-iron skillet. I haven’t had it for years and I can still taste it. If only lipids didn’t taste so darned GOOD, I’d be much slimmer.
